Ingredients

1 Bag of Gefen Medium Brown RIce Noodles

⅓ cup of basil pesto

¼ cup Tuscanini sundried tomatoes

juice of 1 lemon

¼ cup of parmesan cheese plus extra for garnish
Directions
Cook the Brown Rice Noodles: In a large pot, bring water to a boil. Add the instant brown rice noodles to the boiling water and cook according to package instructions until al dente.
Prepare the Pesto: While the noodles are cooking, in a large mixing bowl, combine the prepared basil pesto with the zest and juice of 1 lemon. Mix well to incorporate.
Combine with Sundried Tomatoes: Once the noodles are cooked, drain them and immediately add them to the bowl with the pesto mixture. Toss until the noodles are evenly coated.
Add Sundried Tomatoes: Add the chopped sundried tomatoes to the bowl with the noodles and pesto. Toss again to distribute the sundried tomatoes throughout the dish.
Optional: Add Parmesan Cheese: For an extra layer of flavor, sprinkle grated Parmesan cheese over the noodles and toss again to incorporate.
