1/4 cup cream cheese
2 tablespoons sour cream
1 and 1/2 tablespoons Walden Farms Blueberry Fruit Spread
1/2 teaspoon vanilla
1 and 1/4 cups white chocolate chips
silicone mini muffin tin
For chocolate: melt chocolate over medium heat using a double boiler.
Once melted, line the bottom and sides of your muffin cups with chocolate, using a pastry brush. Put in the freezer for a few minutes to set. Remove from freezer and put a second layer of chocolate.
In the meantime, blend cream cheese, sour cream, strawberry sauce and vanilla. Fill mold with cheesecake mixture, making sure to gently press down well. There should be a tiny bit of space remaining at the top of the mold.
Layer remaining chocolate over the top . Refrigerate to set. Carefully remove from mold. Now you can decorate with drizzled chocolate if desired.
